The spirit
The Kerkennah Islands, located 20 km off the coast of Sfax and just an hour from Loud, are renowned for their unique ecosystem and endemic marine and terrestrial biodiversity. Classified as a RAMSAR wetland in 2012, the Kerkennah Islands are known for their different types of artisanal fishing, including Charfia, a technique handed down from father to son and registered on UNESCO’s list of intangible heritage. In this exceptional natural setting, we offer a culinary experience highlighting octopus fishing, followed by a discovery and participation in the preparation of octopus-based dishes. A heritage written in the feminine. The experience also includes a visit to the Ottman Borj El Hsar tower and historic museums. All in a spirit of solidarity and collaboration.
We’ve got you covered
Arrival on the island. Welcome by our team and departure for an exceptional day of immersion with the fishermen and women of Kerkennah.
We start with a visit to the fishermen’s village, where you’ll be shown the traditional fishing technique for octopus, the symbol and emblem of the Kerkennah archipelago. You’ll learn about the symbiosis between this method and the preservation of marine resources. Of course, octopus fishing is a method that protects and preserves the environment. The fishing gears used are gargoulettes, stones and nasses, simple traditional tools that do not damage the octopus.
We then set about preparing traditional Kerkennian octopus dishes with the women of the group. By putting your hands in the dish, you’ll be able to smell the ingredients and get even closer to the textures and aromas. Doing it with the women of the island will certainly give you a sense of belonging and joy. In any case, they’re delighted to welcome you and chat with you. You’ll also understand their pride and attachment to their know-how and to promoting their marine terroir.
After presenting our island’s culinary habits, history and traditions, they explain the recipes and ingredients required.
Once our dishes are cooked, we’ll set the table for lunch. We’ll enjoy the dishes you’ve prepared together. This moment of pure delight will take place in a festive atmosphere, with a troupe playing Kerkennian music.
